Originating from the tropics, a beautiful variety of oyster boasting stunning shades of deep and pastel pink mushrooms form in more delicate but wide clusters

Taste Profile:

More aromatic in taste to the winter oyster varieties, develops light umami & seafood flavours when caramelised 

Cooking:

Suitable for sautéing, roasting, shallow frying, deep frying in batter or crumb. Great for pickling and fermenting to retain the striking colour.

Nutrition/medicinal information:

Generally a good source of protein, fibre and nutrients such as vitamin D. May have similar cholesterol reducing properties to the grey oyster
